Salad Rolls with Hoisin Dipping Sauce

Dipping Sauce:
1/2 cup water
6 tbsp hoisin sauce
1/2 tsp sesame oil
1 1/2 tsp ginger
1/2 tsp garlic
1/2 can tomato paste (may be substituted with 1 cup ground tomatoes)
2 1/2 tsp chili garlic sauce ( may adjust if you prefer it less hot)
1 tsp sugar
  • combine ingredients in saucepan and warm until just at a simmer.
  • remove from heat and transfer to bowl to cool.


Rolls:
1/10 pkg rice noodles soaked in water (I use really thin brown rice noodles)
1/2 cucumber (cut into thin strips)
1/4 red pepper (cut into thin strips)
1 cup lettuce (diced small) (nappa cabbage can be used as substitute)
1/4 cup cilantro (diced)
8 cashews (chopped)
rice papers

To create the rolls:
  • follow the instructions on your rice paper package to soften the paper
  • (I wet the paper and they lay between 2 damp clean dishcloths until soft)
  • lay all items together in the paper to the side closest to you and roll 1 full turn
  • fold in both sides and roll remainder of way to create your roll filled with yummy stuff
Serve rolls with cooled dipping sauce...perfect for a summery day!
