1 can black beans
1 onion
2 grilled chicken breasts - cut or shredded
2 carrots - diced finely
10 cups of water & 5 low sodium chicken boullion pouches OR 3 cartons of low sodium chicken stock
1 c ground tomatoes
1 1/2 c salsa
1.5 tbsp chili powder
simmer together for an hour
serve with grated cheese (optional)
top with cilantro (optional)
